Sometimes after work I just want to kick back and relax. Too bad, that can never happen. I still need to clean and whip up dinner for my hubby and son. The days when I just had an absolutely tiring day at work calls for a fast and easy meal, but still comforting. That’s when I make baked salmon!
Growing up, I’ve always had the basic baked salmon slathered with mayonnaise and topped with fried garlic. That was good too, but I try to make sure my family and I eat healthier options as much as possible. As usual, I love spending my lunch break at Trader Joe’s and browsing around. That’s when I stumbled upon their Cilantro and Chive Yogurt Dip! I thought to myself, “hmm this looks interesting, what can I do with this?”. When I took it home I ate it w/ pita chips, which is really good too, but way too tangy for me. I was feeling a little experimental one day, and decided why not try it with salmon or chicken. I had salmon fillets in my fridge so I was excited to give it a try. Try this one night for your family and friends, I’m sure you’ll be making it at least once a week! I know I have!
Baked Salmon Recipe:
4-6 oz of Trader Joe’s Cilantro and Chive Yogurt Dip (which is about half of the container)
2 skinless salmon fillets (1/2 lb)
1 tbs EVOO
2 cloves of minced garlic
1/2 tsp salt
1/2 tsp pepper
1/4 tsp of Cayenne pepper (optional for a little kick)
Directions:
1) Preheat oven to 400 degrees
2) Pat salmon with paper towel to take out excess water (from defrosting).
3) Add EVOO to bottom of ovenproof dish to prevent salmon from sticking.
4) Place salmon on dish and slather the yogurt over the salmon until it is evenly coated.
4) Evenly sprinkle garlic, salt & pepper over the salmon.
5) Sprinkle a dash of the cayenne pepper until desired flavor of heat (optional)
6) Bake for 20 minutes.
Then VIOLA! You’ve got yourself a delicious dinner!
