How was everyone’s long weekend and Thanksgiving? Did you eat plenty of food? I know I did. I may have eaten way too much, and now that Thanksgiving is over, I want something simple, yet hearty. Finally, there’s rain in Los Angeles, so a hearty meal is definitely needed. I found this recipe and idea from my mommy friend on Instagram, Katherine. She is always whipping up delicious healthy vegan meals for her family. She made this lentil & sweet potato curry, and decided to give it a try. Also, I needed my family to eat a little healthier because we really did eat too much this past few days!!
Ingredients:
-1 1/2 tbsp coconut oil
-1 cup chopped onions
-1 cup dried green lentils
-1 medium sweet potato (cut into 1 inch cubes)
-1 large carrot (chopped)
-1/2 tsp ground turmeric
-1 tbsp mild curry powder
-1/2 tsp ground cumin
-1/2 tsp sea salt
-black pepper to taste
-1 cup coconut milk
-1 qt vegetable broth or water
Directions:
1. Heat the oil in a large pot over medium heat. Saute the onion until it’s turning a little golden.
3. Add the water or broth and bring to a boil. Reduce the heat to a simmer and cook for 30 minutes, or until the lentils and sweet potato are tender.
4. Stir in the 1 cup of coconut milk. Season with salt and pepper, to taste, and serve warm.
Viola! All done! Enjoy!
