Garlic & Parsley Pasta Recipe

Last night, my best friend, Jackie and I had a little holiday dinner. Instead of going out to eat, we decided to cook instead. Last time we cooked together was senior year of high school, which was about 7 years ago! That cooking session back in the day was an epic fail! But, this time around was a success.

We went to our usual favorite market, Trader Joe’s and buy all the things we need to make chicken parmesan, oven-roasted zucchini, and garlic & parsley pasta. After that, we headed over to her place to start cooking. I wanted to share with you how make this simple and delicious pasta that I grew up eating almost once a month. My mom made it all the time to pair it with seafood or steak. It’s made with a lot of garlic (the more the better), parsley, wine, and EVOO. Since Jackie and I were going to eat something heavy like chicken parmesan, we didn’t want to pair it spaghetti with marinara sauce so,

I opted to make the garlic & parsley pasta instead. 

This pasta is very similar to Aglio E Olio, but I added white wine to it. I also usually cook it with angel hair pasta, but Trader Joe’s was out of it! Can you believe that?! So, I bought the Trader Joe’s spinach & chive linguini pasta instead and it’s still just as good, but a little heavier.

Let’s get started!
Ingredients: 

-8 oz Trader Joe’s spinach & chive linguini pasta
-1 cup fresh minced parsley 
-8 large garlic cloves (chopped) or 3 tbsp minced garlic 
-1/3 cup high quality EVOO
-1 cup cooking white wine (I used a 2 buck chuck chardonnay) 
-1/2 tbsp Knorr granulated chicken bouillon (optional, but add for extra flavor)
-Salt & pepper to taste 
-Grated parmesan cheese for garnish
Directions: 

Bring large pot of water to boil and cook pasta according to directions. When finished cooking, drain and set aside.
Meanwhile, heat the olive oil over medium heat in a pot large enough to hold the pasta, such as a 12-inch sauce pan or a large shallow pot. 

 Add garlic and cook for 2 minutes, stirring frequently, until fragrant. Don’t let it turn brown! 
 Add parsley and cook for about 2 minutes until softened. 

 Add the white wine, mix, and let simmer until the liquid has been reduced to half. 
 Once, the wine has been reduced to half add pasta and seasonings, and toss well. 
move from heat, and garnish with grated parmesan cheese if you wish.
Viola! You’re all done!
This is how our dinner turned out. Oven-roasted zucchini, baked chicken parmesan, and the garlic & parsley pasta. 
I hope you enjoy making this dish. It’s so easy to do, and you can pair it with any meat. If you like, you can sautee seafood mix with EVOO, garlic, salt & pepper, and lemon. Then mix it in with the pasta. It will be so delicious. Or, this pasta can even be paired with a baked lemon pepper fish too. 
I really enjoyed my night with my best friend. We drank wine, laughed and shared hilarious stories, and also confided on each other about certain things. It was a nice little break away from the little one, even though I was missing him. Here’s a few pictures from our night. 

We ended the night with a slice of delicious speculoos cookie butter cheesecake. It was soo good! But, one slice is enough for me.
