Almond Butter Chocolate Chip Cookies

Happy New Year! How was everyone’s New Year celebration? Mine was quiet, but my family still had a lovely evening. 
I am one big cookie monster! I love cookies of all types, but my favorite is always chocolate chip cookies. I don’t like crunch chocolate chip cookies, I love ooey gooey warm and chewy chocolate chip cookies. Second to that, I also love oatmeal and raisin cookies. I’m not much of a baker though, I leave that to my mom. She is the best with pastries and sweets. However, I’ve been feeling a little experimental lately and wanted to try something new. I’ve had half a jar of almond butter sitting in my pantry for about a month, and I really didn’t want to eat it with apples or celery anymore. So, I searched for what I can do with almond butter found this recipe on Pinterest, and I’m so glad I did! 
Almond butter chocolate chip cookies are my new faves! They’re so good and so easy to make. You know me, I love sharing easy and simple recipes! So, I feel obliged to share this recipe with you all! This recipe was adapted from Sally’s Baking Addiction
Ingredients: 
-1 cup almond butter
-1/2 cup brown sugar
-1 large egg
-1 tsp baking powder
-1 cup dark chocolate / semi-sweet chocolate chips
Directions: 

Pre-heat oven to 350F degrees and line with parchment paper or aluminum foil.
In a medium bowl, beat the egg. Add the almond butter, brown sugar, and baking powder. Mix everything together very well. 
Then fold in chocolate chips until well combined.
The almond butter can sometimes be hard to mix in, so you’re going to put in a little extra effort with your arms!
I have noticed that the dough looked a little melted, so I covered the bowl and kept it in the freezer for about 1/2 an hour. 
After, I scooped the dough and formed them into 1.5 inch balls,  and lined them into a baking sheet. With a back of a spoon, I gently pressed onto the ball shaped dough. 
I then baked the cookies for 8-10 minutes. I like them chewy so I took them out of the oven at 8 minutes.
Viola! Almond butter chocolate chip cookies are ready! Next time, I want to add flax seeds or chia seeds to them. 

I hope you give these cookies a try! They’re really good, but it’s best to consume them when they’re fresh out of the oven. I love warm, soft, and chewy cookies! Nathan loves them too, that’s how you know they’re delicious!
